Scotch Egg with Salad

A gorgeous runny center and a perfectly golden crisp outside, this flavorful and filling scotch egg is perfect to fill you up with energy.

Scotch Egg with Salad

5 large eggs for boiling
2 eggs for egg wash
1 lb Italian sausage
1 T chives
2 cloves garlic, minced
1 T mustard
salt
pepper
flour
bread crumbs
canola oil (for frying)
mix greens
ranch dressing

1. Preheat oven to 400 degrees.Bring medium pot of water to a boil. Add 5 eggs and boil for 6 minutes. Remove immediately and place in ice water bath to cool.

2. Combine sausage, chives, garlic and mustard in large bowl.

3. Carefully remove shells from cooled eggs. Press sausage into thin patties and wrap around eggs. Be sure egg is completely wrapped in sausage.

4.Roll sausage-wrapped egg in flour, then dip in egg wash and then coat with bread crumbs. Transfer to saute pan filled with 1 inch of hot oil and cook for about 3 minutes, until all sides are golden brown.

5. Place fried eggs in baking dish and cook in preheated oven for 5 minutes. Slice in half and serve with mustard sauce. Sprinkle with salt and pepper. Serve immediately.
