Steak with Sauteed Mushrooms

Ingredients:

1 tsp canola oil

3 pcs beef steak

1 shallot

1/2 tsp thyme

3/4 cup beef stock

1/2 tsp corn starch salt and pepper

For the mushroom sauce:

2 tsp olive oil

4 cups sliced shiitake and wild mushrooms

1/4 tsp salt

1/2 tsp chopped fresh tarragon

Procedure: 

1. Preheat oven to 425F.

2. Heat canola oil in skillet. Meanwhile, sprinkle steaks with salt and pepper. When oil simmers, add steak and cook until the bottom is deeply browned.

3. Transfer the skillet to the oven and roast until the steaks are 130F. For medium rare, roast for 8 to 11 minutes.

4. Place skillet over medium-high heat. Add shallots and thyme, cook until the shallots are browned.

5. For the mushroom sauce, heat olive oil, sauteed mushrooms and tarragon then add stock. Stir occasionally until mushrooms turn brown. Serve steak with the sauce.
