Seafood Couscous Paella

You'll be surprised on how easy to whip this couscous paella!

1 medium onion, chopped
1 clove garlic, minced
1/2 teaspoon dried thyme
1/4 teaspoon fennel seed
1/4 teaspoon salt
1/4 freshly ground pepper 
2 teaspoon EVOO 
1 pinch saffron 
1 cup diced tomatoes
1/4 cup vegetable broth
1/4 freshly ground pepper 
100 grams scallops
100 grams shrimps
100 grams mussels

INGREDIENTS sp 

1. Heat oil in a large saucepan over medium heat. Cook onion for 3 minutes.

2. Add garlic, thyme, fennel seeds, salt, pepper, and saffron. 

STEP 2B

 

 3. Add in tomatoes and broth. Reduce heat and simmer for 2 minutes.

STEP 3C sp

 

 

4. Increase heat to medium; add scallops. shrimps, and mussels. Stir occasionally for 2 minutes.

 

STEP 4C sp

 

5. Stir in couscous. Cover, remove from heat and let stand for 5 minutes. Fluff and then serve.
