Gazpacho in Tercios (Cold Spanish Soup 3 ways)

The famous Spanish cold tomato soup in 3 ways!

1/2 cup blanched, peeled almonds*

1 whole garlic

4 cups water

1tsp salt

5 red tomatoes

1 red bell pepper

1 bottle extra virgin olive oil

5 green tomatoes

2 cucumbers

2 green bell peppers

1 small hot green chiles

4 green onions

1 medium baguette

6 tbsp wine vinegar

2 tbsp lime juice

10 pcs ice cubes

1 and ½ baguette

1 green chili

 

 c INGREDIENTS

 

 1. Prepare the solid ingredients by chopping them down to small pieces enough to fit inside a blender

2. Prepare the white garlic gazpacho by blending together then set the mix aside in a bowl:

½ cup almonds

3 to 4 sliced baguette (cubed)

cloves garlic

4 cups water

5 tbsp of olive oil

3 tbsp of vinegar

3. Prepare the tomato gazpacho by blending together then set the mix aside in a bowl

5 medium tomatoes

2 slices of baguette

2 cucumbers

1 onion

3 gloves garlic

1 red bell pepper

2 tbsp of vinegar

½ cup extra virgin olive oil

4. Prepare the green gazpacho by blending together then set the mix aside in a bowl

5 green tomatoes

2 large cucumbers

1 small green chile

3 onions

1 clove garlic

insides of 2 slices of baguette

½ cup extra virgin olive oil

2 tbsp vinegar

2 tbsp lime juice

Salt to taste

5. Top each bowl with 2-3 pieces of ice. Serve cold.
