Beef and Kimchi Fried Rice

This Korean inspired fried rice uses brown rice!




For the beef and marinade:
1 cup bulgogi beef
1 1/2 teaspoons cornstarch
½ teaspoon sesame oil
1 teaspoon soy sauce
¼ teaspoon sugar
1 teaspoon mirin

To cook the beef and kimchi fried rice:
2 eggs
3 tablespoons oil, divided
1 medium onion, finely chopped
1 red bell pepper, chopped (you can also use a red long hot pepper if you like heat)
1 1/2 cups kimchi, coarsely chopped
4 cups cooked brown
Salt to taste
½ teaspoon sesame oil
½ cup chopped scallion
chili flakes, to taste


1. Mix together the beef and marinade ingredients and set aside for at least 15 minutes.

2. Cook the eggs sunny-side up in a pan, and keep them warm while you’re making the rice. Make sure the yolks stay runny!

3. Sear the beef and then set it aside on a plate.

4. Cook the onion until it’s translucent. Add the peppers and cook for another minute and add kimchi, cooked rice, scallions, and chili flakes.

5. Stir everything together well. Serve in a bowl with the cooked beef and fried egg.
